Best Ever Tofu Scramble

When I say I eat this every day, I’m not kidding. EVERY single day, I wake up and have this for breakfast. When I eat something else for breakfast I feel like I am missing out because it’s THAT good!

I happened upon this recipe by lots of trial and error, but my main mission was to find something that tasted better than eggs in the morning and still filled with protein. My fiancee wanted to make sure we got our cholesterol in check and I knew this was the perfect way to do it!

Best Ever Tofu Scramble

Ingredients:

  • 1 block of extra firm tofu (firm is ok, it will give you a softer texture)

  • Better Than Bouillion “Chicken Stock” starter - vegetarian version (you can use any veggie broth concentrate, even miso paste is great here! We don’t want actual broth though, it would be too much liquid)

  • Olive Oil

  • Turmeric

  • Garlic Powder

  • Fresh Black Pepper (must be freshly ground)

  • Onion Powder

  • 1/2 lemon

  • Nutritional Yeast

  • optional but highly recommended: vegan cheese

Instructions:

  1. Preheat a pan on medium-low with a good drizzle of olive oil

  2. Remove your tofu from the package and crumble into the pan

  3. Add all of the spices (turmeric, garlic powder, onion powder, black pepper) and stir together to mix. Measure with your heart, but I tend to go heavier on garlic and pepper and lighter with turmeric and onion powder. Turmeric will give you part of the yellow color so don’t be afraid to add a little more if needed.

  4. Add your broth concentrate to the pan and mix into the tofu well

  5. (If using vegan cheese, add this here) Cover the pan for 2-3 minutes and let the flavors meld together

  6. Remove from heat and top with nutritional yeast (the more the merrier) and squeeze 1/2 lemon. Once you stir this in, you have your tofu ready to eat!

This meal should be enough for 2-3 servings, It also stores really well in the fridge up to a week and reheats exactly the same as fresh. I love to make a double batch and have several days ready to go! My favorite way to eat this is alongside some trusty avocado toast, or even in a homemade breakfast taco with some potatoes and black beans!

Optional add-ons:

  • Chili lime seasoning (the one from Trader Joe’s has me in a chokehold right now!)

  • Additional nutritional yeast

  • Hot sauce, if you like that kind of thing!

  • Additional veggies can be added in at the beginning of the recipe if you’d like to pack in some extra nutrients. My personal favorite is zucchini, onion, bell pepper and spinach! I’ve also loved the combo of arugula, cherry tomatoes and pickled onions.
